Here are three family favorite crappie recipes that you can make in a matter of minutes for preparation time. They are very tasty and will always delight the family. Instead of Friday night fish fries at the local restaurants or taverns, you can stay home and make your own fish dinner.

Casserole Crappie Delight

This is a delightful casserole that can be prepared in a matter of ten minutes and ready to eat in forty-five minutes.

Crappie fillets
Bottle of Italian salad dressing
Potato chips
Mild cheddar cheese shredded
Diced onion
Salt and Pepper

Wash the crappie fillets and place them in a single layer in a casserole dish. Add pepper and salt to season. Use the Italian salad dressing to pour over the fish. Add the diced onion to each piece of fish. Caution: Do not over do it with the onion.

Crush the potato chips and sprinkle over the fish in a thin layer. Cover the casserole with a cover or tin foil and bake at 400 degrees for thirty minutes. After the fish has baked for thirty minutes, remove from the oven and sprinkle the mild cheddar cheese over the top. A thin layer will work great.

Place back in the oven uncovered and bake until the cheese is melted.

Crappie Crisp Fish Fry

This recipe makes a difference when you are looking for a recipe to make your own batter for an enjoyable fish fry. It is easy to make and within no time, the fish is ready for the table.

Cut about twenty crappie filets into two-inch pieces. Place them in a bowl of water and add some ice. Place in the refrigerator while you prepare the batter. Turn on the deep-fryer and get it hot while preparing the batter.

Buy a fish batter from your local grocer or use Tempura Fish Batter if you can find it.

Add to the batter:

1/2 tsp garlic powder
1/2 tsp soy sauce (if you have it)
1/4 tsp lemon juice (if you have it)
Salt and Pepper

Follow the directions on the batter and add ice-cold water. Mix up the ingredients until the batter is just thick enough to coat each fish without dripping off.

Grab the fish from the refrigerator and dry with a paper towel. Dip into the batter and then place into the deep fryer. Only put about five pieces in at a time if using a home deep fryer. It takes only about three minutes a batch to deep fry. Then remove and continue until all of the fish are done and ready to serve.

Crappie ala Stir Fry

Two pounds of crappie filets cut into small chunks
Two c broccoli
One sliced onion
Two cups mushrooms sliced
One green pepper sliced
1/4 teaspoon garlic
1/4 teaspoon Old Bay
1/2 teaspoon Seasoning Salt
Salt and Pepper
Olive oil
Rice

Cook the rice and set aside.

Pour olive oil into a wok or a frying pan. Heat oil and add broccoli, onion, mushrooms and green pepper. Saute until golden and soft. Add the filets and the seasonings and stir. This should cook for ten minutes with frequent stirring.
Serve over the already prepared rice.
